Cilantro Lime Shrimp (kind of) and Crash Hot Potatoes

Dinner tonight was yum. Super yum.

The plan was to make Cilantro Lime Shrimp, based on a recipe from Marci at the Weight Watchers board.

Cilantro Lime Shrimp
juice and zest of a lime
1 cup (big handful) of cilantro
1 tsp cumin
1 tsp chili powder
1 tsp chopped garlic
1 TBLS olive oil
shrimp

Marinate for about 30 minutes and then either grill or saute.

Well. That was the plan. The only problem was, I was missing a few ingredients. The only place that I can find cilantro is the health food store, and they closed 12 minutes before we got there. Once we got home I realized that the cumin I thought I had was not cumin. What I did have was a bunch of flat leaf parsley and a Mexican spice blend we had picked up the other day. Problem solved!

I am sure it was not as good as the cilantro lime shrimp would have been, but it was good.

The next dish we made... Oh. My. God. So simple. So easy. So good.

Just so you don't think that all we eat is meat and potatoes, I wanted to let you know that we had some grapes, too.

By the way... weigh in was this morning. I lost 3 lbs. Apparently, walking all over the state of Lower Saxony is conducive to weight loss. Who knew?
